Our first puff pastry in snack format

At the Sandwich & Snack Show 2023, we at the Mademoiselle Desserts Group proudly presented our latest innovation in puff pastry: the puff pastry snail.

Our group, known for crafting products that balance tradition and innovation, is expanding our snacking offerings by transforming classic flaky pastries into an individual treat, perfect for on-the-go enjoyment by everyone. Inspired by the chouquette, this product can be savored individually or in batches. Our goal with this innovation? To make flaky pastries more “nomadic.”

Since 2019, we have ventured into the snacking market with a range of portable pastries, including mini doughnuts, baby flan, cookies, and muffins. This year, we’re continuing the snacking challenge with our latest creation, the puff pastry snail. With this product, we’re reimagining traditional Viennese pastry in a format suitable for breakfast or any snack throughout the day.

Staying true to our values, we invite you to rediscover the art of sweet puff pastry with a uniquely French twist. Our snail-shaped pastry, made with finely caramelized pure butter puff pastry, features a soft center for an irresistible crispy-soft texture. This 20g recipe complements our traditional palmiers, pailles, and sacristains, which typically weigh between 75g and 150g. With this innovative, gourmet product tailored for the food-to-go trend, we’re excited to reach a younger demographic in the puff pastry market.
