The Basque Cheesecake was invented in San Sebastian, Spain in the 1990s and is a deeply caramelised cousin of the classic NY Vanilla Cheesecake albeit without the crust. While only relying on a handful of basic ingredients, this “other” type of Cheesecake features deep, indulgent flavours of Vanilla and Caramel along with a deliciously creamy texture.
